This last weekend we decided to hit up Core PDX for their grand opening of their food pod. It was a fun event with dragon dances, music and a very festive vibe.

The only hard part about this fun event was the choices. Which food cart should we get our lunch from? With so many new options it was a difficult decision, were we feeling like a crab pot? Russian cuisine? vegan? (mmm maybe not)
Still in the end what caught our eye was a fairly innocuous cart that made a very bold claim. Sou’s and their statement that they made their squid the best!

While ordering it was tempting to go for their other entree. They had a tasty looking Short Rib and Shrimp Plate ($15) that was calling to us. There were a selection of Wings ($11) to choose from with spicy ox pepper. But end of the day, we needed to try those squids!

They did not disappoint!! This Salt and Pepper Squid plate ($12) was phenomenal!!! Just the right amount of crispy fry to be crunchy on the outside and soft on the inside without that overcooked texture you get at some places.

Seasoned so perfectly that you can just keep eating without it becoming overbearing, with added pepper and onions lightly sautéed to break up flavors. Served over a bed of white rice which was nice enough, but we went ahead and splurged the extra Mac Salad side ($3) for a bit of that Hawaiian style to our meal, and that creaminess really contrasted amazingly with the seafood and rounded out our lunch well.

Now maybe the festive vibe and dancing helped our opinion of this cart but we honestly can’t think of the last time we enjoyed such a straightforward seafood dish so much.
It was not only tasty but also looked and smelled so good that strangers would stop by to ask us where we got this dish from. That is how you know you have something special. This is for sure going to be one of our new favorite carts from here out.
